  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves minced garlic
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 cup chopped baby spinach
  • 4 large eggs

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In individual ramekins or one large baking dish, layer the tomatoes, bell pepper, onion, garlic, and feta cheese.
  3. Drizzle olive oil over the top and sprinkle with oregano, sea salt, black pepper, and red pepper flakes.
  4. Bake for 25 minutes until vegetables soften.
  5. Stir in chopped spinach until combined.
  6. Create wells in the mixture and crack an egg into each well.
  7. Return to the oven for another 10 minutes until eggs are set but still soft.
  8. Garnish with fresh herbs if desired and serve warm.
