  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 200g block of feta cheese
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 20g fresh basil

Instructions

  1. Preheat oven to 200C | 390F.
  2. Cube and par-boil potatoes in salted water for 6-8 minutes; drain and steam dry.
  3. Toss par-boiled potatoes with olive oil, thyme, oregano, salt, pepper, and chili flakes in a baking dish.
  4. Roast for 30-40 minutes until golden brown and crispy.
  5. Add feta and lemon to the tray; roast for another 15 minutes.
  6. Squeeze roasted garlic into a bowl and mash; mix with potatoes along with lemon juice and chopped basil.
  7. Drizzle honey over the top before serving warm.
