  • 6 Tablespoons (85 g) unsalted butter
  • ½ cup (100 g) granulated sugar
  • 4 ½5 cups (540600 g) all-purpose flour (spooned and leveled)
  • 2 ¼ teaspoons instant yeast
  • 1½ teaspoons salt
  • ½ cup mashed banana (about 1 large banana)
  • 4 Tablespoons (57 g) unsalted butter (very soft)
  • ½ cup (107 g) packed light brown sugar
  • 1 tablespoon cinnamon
  • 2 large bananas (thinly sliced)
  • ¼ cup (60 ml) heavy cream (slightly warmed for pouring on rolls before baking)
  • 4 ounces cream cheese (softened to room temperature)
  • 4 tablespoons (57 g) unsalted butter (softened)
  • 1 ½ cups (170 g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, combine lukewarm milk and melted butter. Add granulated sugar and yeast; let sit for 5 minutes until frothy.
  2. Mix in mashed banana, salt, and gradually add flour until a soft dough forms. Knead on a floured surface for 5–7 minutes.
  3. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm spot until doubled in size (about 1 hour).
  4. For the filling, mix soft butter, brown sugar, and cinnamon until well combined. Prepare sliced bananas.
  5. Roll out the risen dough into a rectangle, spread the filling evenly, place banana slices on top, and roll tightly into a log.
  6. Slice into 1–2 inch pieces and place in a greased baking dish; let rise again for 30 minutes.
  7. Preheat oven to 350°F (175°C). Pour warmed cream over rolls before baking and bake for 25–35 minutes until golden brown.
  8. For the frosting: mix softened cream cheese, butter, powdered sugar, and vanilla extract until smooth. Spread on cooled rolls.
