  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1 teaspoon cinnamon
  • 3/4 cup graham cracker crumbs
  • 2/3 cup packed light brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2/3 cup mashed ripe banana (about 2 medium-sized)
  • 1/2 cup sour cream
  • 2/3 cup whole milk
  • 1 cup miniature chocolate chips, divided
  • 1 cup miniature vegan marshmallow bits, divided

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin pan with cupcake liners.
  2. In a mixing bowl, beat together the melted butter and brown sugar until smooth. Add in the egg, vanilla extract, mashed banana, and sour cream. Mix until well combined.
  3. In another bowl, stir together the flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs until evenly mixed.
  4. Gradually add the dry mixture to the wet ingredients while alternating with milk. Stir gently until just combined; do not over-mix.
  5. Fold in 3/4 cup of chocolate chips and 3/4 cup of vegan marshmallow bits by hand using a rubber spatula.
  6. Spoon the batter into prepared muffin liners until they are about two-thirds full. Sprinkle remaining chocolate chips and vegan marshmallow bits on top of each muffin.
  7. Place in the preheated oven and bake for about 16 minutes or until a toothpick inserted into the center comes out clean.
  8. Let muffins cool in the pan for about 3-4 minutes before gently transferring them onto a wire rack to cool completely.
