  • 1 ½ cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • ⅓ cup unsalted butter (melted)
  • 4 packages cream cheese (8 ounces each, softened)
  • 1 ¼ cups granulated sugar
  • ½ cup sour cream
  • 2 teaspoons vanilla extract
  • 5 large eggs (room temperature)
  • ½ cup rainbow jimmies

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and sugar. Stir in melted butter until mixed well. Press into the bottom of a springform pan.
  3. In another bowl, beat softened cream cheese until smooth. Gradually mix in sugar, then add sour cream and vanilla until combined.
  4. Add eggs one at a time, mixing gently after each addition.
  5. Pour filling into the crust. Bake for about 60 minutes or until slightly jiggly in the center.
  6. Turn off the oven and let cool inside for an hour before refrigerating for at least four hours or overnight.
  7. Top with rainbow jimmies before serving.
