  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Combine cold cream cheese, granulated sugar, and vanilla in a mixing bowl; beat until smooth.
  2. In another bowl, cream softened butter with brown sugar and remaining granulated sugar until fluffy; add egg yolks one at a time, mixing well after each addition; stir in vanilla.
  3. Whisk together flour, black cocoa powder, baking powder, and salt; gradually mix into the wet ingredients until just combined.
  4. Preheat oven to 350°F (175°C). Scoop about one tablespoon of dough, flatten it slightly, place a teaspoon of cheesecake filling in the center, fold dough around it, and roll into a ball.
  5. Bake for 10-12 minutes on a parchment-lined baking sheet until set but soft in the center; cool on a wire rack.
