  • 2 cups bread flour
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 Tbsp olive oil
  • 1/2 tsp squid ink
  • 1 cup warm water
  • 4 oz button mushrooms
  • 1/2 cup shallots or red onion
  • 45 cloves garlic
  • 2 Tbsp cooking apple juice
  • 1 cup jarred pesto sauce
  • 1 cup Green Pesto Gouda cheese

Instructions

  1. Combine bread flour, garlic powder, salt, and yeast in a mixing bowl. Add squid ink and olive oil, then gradually mix in warm water until a dough forms.
  2. Knead on a floured surface for about 5 minutes until smooth. Place in an oiled bowl, cover, and let rise in a warm place for about 1 hour.
  3. Sauté sliced mushrooms, shallots (or onion), and garlic in butter until soft. Stir in apple juice and season before removing from heat.
  4. Preheat oven to 475°F (245°C). Punch down the risen dough, divide into four portions, and roll each into a round shape.
  5. Transfer flatbreads onto baking sheets. Spread pesto over each flatbread and top with the mushroom mixture followed by cheese.
  6. Bake for about 10–12 minutes until golden brown. Drizzle with balsamic reduction before serving.
