  • 12 eggs
  • 1 stalk of celery (rinsed)
  • 1 green onion (rinsed)
  • 4 tablespoons mayonnaise
  • 2 tablespoons Creole mustard
  • ¼ teaspoon Cajun seasoning
  • 1 teaspoon hot sauce

Instructions

  1. Boil the eggs in a pot of water for 11 minutes after bringing to a boil. Cool in ice water before peeling.
  2. Slice each egg in half, remove yolks, and place them in a mixing bowl. Finely chop the celery and green onion, then add them along with mayonnaise, Creole mustard, Cajun seasoning, and hot sauce to the yolks.
  3. Mash until smooth and creamy, then spoon or pipe the mixture back into each egg white half.
