  • 3 green onions, sliced
  • 1/2 cup soy sauce or tamari (for gluten-free)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons rice vinegar
  • 2 teaspoons cornstarch mixed with water (to thicken)
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced

Instructions

  1. Cook the noodles according to package instructions; drain and set aside.
  2. In a small bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, garlic, ginger, and cornstarch mixture.
  3. In a large skillet or wok over medium-high heat, add vegetable oil and cook the chicken for about 5-7 minutes until golden brown.
  4. Add bell peppers, broccoli, and carrots; stir-fry for about 3-4 minutes until vegetables are tender but crisp.
  5. Combine cooked noodles with the chicken and vegetables in the skillet; pour in the teriyaki sauce and toss to coat. Heat through for an additional 2-3 minutes.
