Instructions

  1. Preheat your oven to 350°F (175°C) and position the rack in the middle.
  2. Lightly grease mini loaf pans and line with parchment paper.
  3. In a mixing bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, oil, and vanilla until smooth.
  4. Add flour, baking powder, baking soda, pumpkin pie spice, and salt; mix until just combined.

  6. Bake: Mini loaves for 28-30 minutes or until a toothpick comes out mostly clean.
