  • 1 cup orzo
  • 3 ears of corn (kernels removed)
  • 2 ½ cups chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 4 garlic cloves (minced)
  • 1 yellow onion (finely chopped)
  • ¾ tsp salt (¼ tsp for salmon, ½ tsp for orzo)
  • 1 tsp black pepper
  • 3 sprigs of thyme (more for serving)
  • 1 tbsp Cajun seasoning
  • 1 tbsp lemon juice
  • Chili flakes for serving (optional)

Instructions

  1. Pat the salmon fillets dry and season with salt, garlic powder, and Cajun seasoning.
  2. In a nonstick skillet, heat olive oil and butter over medium-high heat. Sear the salmon for 3-4 minutes per side until cooked through; set aside.
  3. Lower heat and sauté minced garlic and chopped onion until softened.
  4. Add orzo and corn kernels, toasting for about 1 minute.
  5. Pour in chicken broth; bring to a boil then reduce to simmer for about 10 minutes until orzo is nearly al dente.
  6. Stir in Parmesan cheese, heavy cream, and lemon juice; simmer for an additional 2 minutes.
  7. Return salmon to skillet; heat through for another 2-3 minutes before serving.
