  • 8 ounces elbow pasta
  • 1/2 cup dill pickle juice
  • 1 cup cheddar cheese (small diced)
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 3 tablespoons white onion (finely chopped)
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/4 teaspoon Sriracha
  • Salt and pepper to taste

Instructions

  1. Cook the elbow pasta according to package instructions until al dente. Rinse under cold water and drain.
  2. Marinate the drained pasta in 1/2 cup of dill pickle juice for 5 minutes before draining again.
  3. In a separate bowl, whisk together mayonnaise, sour cream, remaining pickle juice, Sriracha, salt, pepper, and chopped dill until smooth.
  4. In a large bowl, combine the pasta with cheddar cheese, sliced pickles, chopped dill, and onion. Pour the dressing over and toss until well coated.
  5. Refrigerate for 4 to 6 hours before serving to enhance the flavors.
