  • 2 large eggs
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup canola oil
  • 3/4 cup packed light brown sugar
  • 1 tsp pure vanilla extract
  • 1 1/2 cups packed shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F. Grease a 9×5-inch loaf pan with nonstick spray.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and sea salt; set aside.
  3. In a large bowl, mix eggs, melted butter, oil, brown sugar, and vanilla extract until smooth.
  4. Gradually add dry ingredients to the wet mixture until just combined. Fold in shredded zucchini and three-quarters of the chocolate chips.
  5. Pour batter into prepared loaf pan and top with remaining chocolate chips.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out mostly clean.
  7. Cool for 15 minutes in the pan before transferring to a wire rack to cool completely.
