  • 1 pound lean ground turkey
  • 2 medium zucchinis, cubed
  • 1 bell pepper, chopped
  • ½ onion, diced
  • 5 ounces fresh baby spinach
  • 1½ tablespoon olive or avocado oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon paprika
  • 1 teaspoon garlic (minced)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried basil
  • ½ cup water
  • 2 tablespoons tomato paste

Instructions

  1. In a large skillet over medium-high heat, brown the ground turkey while crumbling it with a spatula.
  2. Add seasonings (salt, pepper, chili powder, oregano, paprika, garlic) and sauté for another minute. Remove from skillet.
  3. Lower heat to medium and add olive oil with zucchini, onion, and bell pepper. Season and cook until tender.
  4. Return the turkey mixture to the skillet; add water, tomato paste, and spinach. Stir to combine and simmer covered for 5-10 minutes.
