  • 8 oz dry rotini pasta
  • 9 oz hard turkey slices, chopped
  • 6.5 oz turkey pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • ½ cup pepperoncini, sliced
  • 8 oz mozzarella pearls
  • ¼ cup red onion, thinly sliced
  • ⅓ cup fresh basil, sliced
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 garlic cloves, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and let cool.
  2. In a bowl or jar, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper.
  3. Prepare the salad ingredients by chopping the turkey and turkey pepperoni and slicing the vegetables.
  4. In a large bowl, combine cooled pasta with all prepared ingredients. Drizzle with desired dressing and toss gently.
  5. Chill in the refrigerator for at least 30 minutes before serving for enhanced flavor.
