  • 2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canola oil
  • 4 large eggs
  • 1 (15 oz) can pumpkin puree
  • 2/3 cup water
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar for crumb topping
  • 3/4 cup all purpose flour for crumb topping
  • 1 tsp ground cinnamon for crumb topping
  • 1/2 cup cold butter, cubed for crumb topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 8×4 bread pans.
  2. In a large mixing bowl, whisk together flour, salt, baking soda, cinnamon, nutmeg, cloves, allspice, and ginger.
  3. Add granulated sugar and brown sugar; mix until combined.
  4. Create a well in the center and pour in canola oil; mix gently until just combined.
  5. Incorporate eggs two at a time while mixing after each addition.
  6. Add pumpkin puree, water, and vanilla extract; mix until smooth.
  7. Divide batter evenly between prepared pans.
  8. For the crumb topping: Combine brown sugar, flour, and cinnamon; cut in cold butter until crumbly. Sprinkle over batter.
  9. Bake for 55–65 minutes or until a toothpick comes out clean. Cool before slicing.
