  • 3 large yellow onions
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 6 slices of baguette or crusty bread
  • 1 1/2 cups shredded Gruyère or Swiss cheese

Instructions

  1. Slice the onions thinly and mince the garlic.
  2. Heat olive oil in a Dutch oven over medium-high heat. Season short ribs with salt and pepper, searing until browned on all sides (about 3–4 minutes per side). Remove and set aside.
  3. Add butter to the pot, then add sliced onions. Stir frequently until golden brown (25–30 minutes). Add garlic and cook for another minute.
  4. Return short ribs to the pot, then add broth, Worcestershire sauce, bay leaf, thyme, salt, and pepper. Bring to a simmer.
  5. Cover and reduce heat to low; cook gently for about 2–3 hours until tender.
  6. Toast bread slices in the oven until golden brown.
  7. Remove bay leaf from soup; ladle into bowls, top with toasted bread, sprinkle cheese on top, and broil briefly until melted.
