  • ¾ cup un-sulphured or dark molasses
  • ½ cup unsalted butter
  • 2⅔ cups flour
  • 2 tsp ground ginger
  • 1½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • ½ cup brown sugar
  • ½ cup sour cream or yogurt
  • ½ cup whole milk
  • 1 large egg
  • For the glaze: powdered sugar and lemon juice

Instructions

  1. Preheat oven to 425°F. Grease muffin tray.
  2. In a glass bowl, microwave molasses and butter for about one minute until melted; stir and let cool.
  3. In another bowl, whisk flour, ginger, baking soda, cinnamon, cloves, nutmeg, and salt together.
  4. Combine brown sugar, sour cream (or yogurt), milk, and egg into the cooled molasses mixture; mix well.
  5. Gradually add the wet mixture to the dry ingredients; stir gently until just combined.
  6. Fill muffin tray cavities to the top; sprinkle coarse sugar if desired.
  7. Bake for 5 minutes at 425°F; reduce heat to 350°F without opening the door and bake for another 11-14 minutes until a tester comes out clean.
  8. Cool muffins on a wire rack before glazing with the lemon mixture.
