  • 1 tsp vanilla extract
  • ½ cup pure maple syrup
  • 1 cup grated zucchini, patted dry

Instructions

  1. Preheat oven to 325°F (163°C). Line a baking sheet with parchment paper.
  2. In one bowl, whisk together oats, flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix melted coconut oil, egg, vanilla extract, and maple syrup until combined.
  4. Combine wet and dry ingredients; gently fold in grated zucchini. Chill the dough for 30 minutes.
  5. Drop rounded scoops onto the baking sheet and flatten slightly. Bake for 11-14 minutes until golden around the edges.
