  • 1 cup smooth peanut butter

  • 1/2 cup sugar to roll the dough in
  • 1/4 cup unsalted sweet cream butter (softened)
  • 1/2 cup smooth peanut butter
  • 1 1/2 cups powdered sugar
  • 2 tablespoons whole milk
  • 1/4 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, mix flour, baking soda, and salt. In another bowl, beat together softened butter and brown sugar until creamy. Add peanut butter, egg, and vanilla; mix until well combined.
  3. Gradually add dry ingredients to the wet mixture until just incorporated.
  4. Roll dough into balls about one inch in diameter and roll in sugar before placing on lined baking sheets.
  5. Bake for about 10 minutes or until golden brown around the edges, then cool on a wire rack.
  6. For the filling, beat together softened butter and peanut butter until fluffy; add powdered sugar gradually along with milk and vanilla.
  7. Once cookies are cool, spread or pipe the cream filling onto half of the cookies and top with another cookie.
