  • 1 lb celery root
  • 2 medium carrots
  • 1 medium onion
  • 6 cups beef bone broth
  • 2 cloves garlic
  • Olive oil
  • Diced tomatoes

Instructions

  1. Season the beef with salt and pepper.
  2. In a large Dutch oven, heat olive oil and sear the beef until browned on all sides; remove and set aside.
  3. Sauté onions and carrots in the same pot until soft.
  4. Add garlic and Italian seasoning; cook until fragrant.
  5. Return beef to the pot, add broth, diced tomatoes, and bay leaves; bring to a boil.
  6. Reduce heat and simmer for 45-60 minutes until beef is tender.
  7. Stir in cubed celery root and cook for an additional 15 minutes until tender.
  8. Remove bay leaves and adjust seasoning before serving.
