  • 1 teaspoon active dry yeast
  • 1 tablespoon sugar
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme

Instructions

  1. Prepare the yeast mixture by combining warm water, sugar, and yeast in a medium bowl. Let sit until frothy (about 5 minutes).
  2. In a large bowl, mix flour and salt. Add the yeast mixture and olive oil; stir until dough forms.
  3. Knead dough on a floured surface for about 8-10 minutes until smooth.
  4. Place the dough in an oiled bowl, cover, and let rise in a warm area for 1 to 1.5 hours or until doubled in size.
  5. While the dough rises, prepare the cheese mixture by blending ricotta, mozzarella, Parmesan, lemon zest, and lemon juice.
  6. Preheat your oven to 475°F (245°C) with a pizza stone or baking sheet inside.
  7. Roll out dough into a thin round shape (about 12 inches). Transfer to parchment paper.
  8. Spread the cheese mixture over the dough, sprinkle with thyme, then bake for 10-12 minutes until golden brown.
  9. Remove from oven; drizzle with olive oil and honey before serving.
