  • ¾ cup sugar
  • 2 large eggs
  • ½ cup vegetable oil (or melted coconut oil)
  • ⅓ cup plain Greek yogurt (or applesauce)
  • 2 tbsp lemon zest
  • 3 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 23 tbsp lemon juice
  • Optional: ½ tsp lemon zest or ¼ tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper to prevent sticking.
  2. In a large bowl, whisk together all-purpose flour, baking powder, baking soda, and salt.
  3. In another bowl, beat together eggs, sugar, vegetable oil, Greek yogurt, lemon zest, fresh lemon juice, and vanilla extract until smooth.
  4. Add the dry ingredients to the wet mixture, stirring just until combined to avoid overmixing.
  5. Gently fold in the grated zucchini until evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan and smooth out the top. Bake in your preheated oven for about 50–55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for about 10–15 minutes. Then transfer it to a wire rack to cool completely before glazing.
  8. While cooling, whisk together the powdered sugar and lemon juice until smooth.
  9. Drizzle your lemon glaze over the cooled bread, slice into pieces, and serve!
