  • 3 tablespoons brown sugar (packed)
  • ¼ cup all purpose flour (for topping)
  • ¾ teaspoon ground cinnamon (for topping)
  • ¼ teaspoon salt (for topping)
  • 2 tablespoons unsalted butter (melted, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine chopped nuts, brown sugar, flour, cinnamon, salt, and melted butter for the topping; mix until crumbly.
  3. In another bowl, whisk together flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt.
  4. In a large bowl, beat eggs with sugar until fluffy; then mix in oil, pumpkin puree, milk, and maple extract until smooth.
  5. Gently fold dry ingredients into the wet mixture until just combined.
  6. Pour batter into the greased loaf pan and sprinkle topping evenly over the batter.
  7. Bake for about 50 minutes or until a toothpick inserted comes out clean.
