  • 12 ounces dry pasta (farafalle)
  • 1 English cucumber, diced
  • 1 pint cherry or grape tomatoes, halved
  • 2/3 cup sliced kalamata olives
  • ½ medium red onion, thinly sliced
  • ¼ cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 tablespoon freshly-squeezed lemon juice
  • 2 teaspoons dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in salted water until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, prepare the vegetables: dice cucumber, halve tomatoes, and slice olives and onion.
  3. In a mixing bowl, whisk together olive oil, vinegar, lemon juice, oregano, salt, and pepper.
  4. In a large bowl, combine cooled pasta with prepared vegetables. Pour dressing over and toss until well coated.
  5. Chill in the refrigerator for at least 30 minutes before serving.
