  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh)
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • salt & pepper (to taste)
  • 3 tbsp olive oil
  • 2 tbsp lemon juice (fresh)
  • 1 tsp honey (omit for Whole30)
  • 1 garlic clove (minced)
  • ½ tsp dried oregano

Instructions

  1. Marinate the sirloin steak in olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper for at least 30 minutes.
  2. While marinating, prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper.
  3. Heat a skillet over medium-high heat and sear the marinated steak for about 4-5 minutes on each side until desired doneness. Let it rest before slicing.
  4. Assemble your bowl by layering cooked grains as the base. Top with sliced steak and fresh veggies like cherry tomatoes, cucumber, red onion, olives, feta cheese (if using), and drizzle with tzatziki sauce.
