  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (4 oz) diced green chilies
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp ground cumin (optional)
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper, to taste
  • Chopped cilantro (optional)
  • Lime wedges (optional)

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
  2. Add diced onion to the pot and sauté until softened, about 3–4 minutes.
  3. Stir in chili powder, cumin, smoked paprika, salt, and pepper to season.
  4. Incorporate cooked pinto beans, diced tomatoes with green chilies, diced green chilies, and beef broth. Mix thoroughly.
  5. Bring the mixture to a boil; then reduce heat and let it simmer covered for about 30 minutes.

  7. Serve hot in bowls with optional garnishes like chopped cilantro and lime wedges.
