  • 3/4 cup water
  • 1/2 cup liquid glucose (light corn syrup)
  • Few drops black gel food coloring
  • 6 Granny Smith apples

Instructions

  1. Prepare your surface by greasing baking paper on a tray.
  2. Insert bamboo skewers into the apples and set aside.
  3. In a saucepan, mix sugar, water, corn syrup, and food coloring over medium heat until sugar dissolves.
  4. Stop stirring once dissolved; brush down sides of the pot with water to prevent crystallization.
  5. Cook until reaching hard crack stage (150ºC/310ºF).
  6. Dip each apple into the caramel mixture evenly.
  7. Place dipped apples on the prepared sheet and allow to cool completely before serving.
