  • 1/2 cup pumpkin puree
  • 1/4 cup + 1 tablespoon milk (room temperature)
  • 1/4 cup unsalted butter (melted and cooled)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (topping)
  • 1/2 cup brown sugar (either light or dark, topping)
  • 1/4 teaspoon ground cinnamon (topping)
  • 1/3 cup pecans (chopped, topping)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a casserole dish.
  2. In one bowl, sift together all-purpose flour, whole wheat flour, baking powder, salt, granulated sugar, and spices.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla until smooth.
  4. Combine wet and dry ingredients until just mixed; pour into prepared dish.
  5. In a small bowl, combine topping ingredients (sugars, cinnamon, pecans) and sprinkle over the batter.
  6. Carefully pour hot water over the top without stirring.
  7. Bake for 40 minutes or until set in the center.
  8. Let cool for 5 minutes before serving.
