  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 large carrot, diced
  • 4 cups vegetable broth
  • 1 cup quinoa, rinsed
  • 2 cups fresh or frozen corn kernels
  • 1 can (14.5 oz) coconut milk
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a large pot over medium heat, add olive oil and sauté chopped onion until translucent. Add minced garlic, celery, and diced carrot; cook for about 5 minutes until softened.
  2. Pour in vegetable broth and rinsed quinoa; stir well and bring to a boil.
  3. Reduce heat to low; add corn kernels and coconut milk along with smoked paprika and thyme. Let simmer for 20 minutes until quinoa is cooked.
  4. Season with salt and pepper to taste, then ladle into bowls and garnish with chopped parsley before serving.
