  • 12 large baking potatoes (washed and cubed)
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 7 oz (200 g) block of feta cheese
  • 1 head of garlic (top sliced off)
  • 1 lemon (quartered)
  • 1 tablespoon honey
  • ¼ cup (20 g) fresh basil, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss cubed potatoes with 1 tablespoon of olive oil, thyme, oregano, salt, and pepper until well coated.
  3. Arrange the seasoned potatoes on a baking tray with the feta cheese in the center and the head of garlic alongside them.
  4. Add quartered lemon pieces around the potatoes and drizzle honey over the feta and garlic.
  5. Roast in the oven for about 50 minutes or until the potatoes are golden brown and tender, stirring occasionally.
  6. Once done, remove from the oven and sprinkle fresh basil on top before serving.
