  • ½ quart sunflower oil (or vegetable oil)
  • 1 cup chopped fresh basil

Instructions

  1. Heat sunflower oil in a large pot over medium-high heat until boiling.
  2. Fry zucchini slices in hot oil for about 5-6 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.
  3. Combine fried zucchini with chopped basil and salt, then drizzle with olive oil.
  4. Cook spaghetti according to package instructions until al dente, reserving 2 cups of cooking water before draining.
  5. Toss cooked spaghetti in a large skillet with the zucchini mixture, adding reserved pasta water until creamy.
  6. Stir in grated parmesan cheese until well-coated, seasoning with additional salt as desired.
