  • 1 medium onion (diced)
  • 1 medium red bell pepper (chopped)
  • 34 garlic cloves (minced)
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 1/2 cup green olives (optional)
  • 1 (15 oz) can kidney beans (drained and rinsed)
  • 1 1/4 cups vegetable broth
  • 1 1/4 cups salsa
  • 1 1/2 cups white rice (uncooked)

Instructions

  1. Soak the rice in cold water for at least 10 minutes; drain.
  2. In a large skillet or pot, heat oil over medium heat. Sauté onion and bell pepper for about 3 minutes until softened. Add garlic and spices; sauté for another minute.
  3. Stir in soaked rice, salsa, and vegetable broth; bring to a boil.
  4. Cover and reduce heat to low; simmer for about 15–20 minutes without lifting the lid.
  5. After cooking, stir in kidney beans and optional olives. Adjust seasoning as needed before serving.
