  • 1 ½ pounds mini potatoes (red creamer or similar)
  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • parsley flakes (fresh or dried)

Instructions

  1. Preheat your oven to 385°F (195°C).
  2. Line a baking sheet with parchment paper.
  3. Wash mini potatoes thoroughly under cold water.
  4. In a bowl, mix cold water with 2 tablespoons of lemon juice.
  5. Carve skull faces into each potato and place them in the lemon water bath.
  6. In another bowl, combine olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper.
  7. Drain carved potatoes and toss them in the seasoning mixture until evenly coated.
  8. Arrange potatoes on the baking sheet with carved sides up and bake for about 30 minutes until golden brown.
