  • 1/4 cup ice water
  • 1/4 cup lemon juice (cold)
  • 1 lb sweet potatoes
  • 5 tablespoons unsalted butter (softened)
  • 1 cup dark brown sugar
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cups evaporated milk

Instructions

  1. Prepare sweet potatoes by peeling, cutting into chunks, and boiling until tender. Drain and mash until smooth.
  2. For the crust, mix flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Gradually add ice water and lemon juice until dough forms. Chill for at least 30 minutes.
  3. Preheat oven to 350°F (175°C).
  4. Roll out the chilled dough into a circle and transfer to a pie dish.
  5. Mix mashed sweet potatoes with softened butter, brown sugar, eggs, spices, salt, and evaporated milk until smooth.
