  • 1 cup ranch dressing
  • 2 Tablespoons mild taco seasoning
  • 2 pounds boneless, skinless chicken breasts (cut in bite-size pieces)
  • salt and pepper (to taste)
  • 8 cups Romaine lettuce (chopped)
  • 2 Roma tomatoes (diced)
  • 1 cup corn kernels (fresh or frozen)
  • 4 green onions (sliced)
  • 1 can (15 ounces) black beans (drained then rinsed)
  • 1/2 cup mild cheddar cheese (shredded)
  • 1/4 cup cilantro (chopped)
  • juice of 1/2 of a lime
  • 1 cup tortilla chips (crushed)

Instructions

  1. Whisk together ranch dressing and taco seasoning in a small bowl; refrigerate.
  2. Cook chicken in a non-stick skillet over medium-high heat for about 12 minutes; season with salt and pepper.
  3. In a large mixing bowl, toss together romaine lettuce, tomatoes, corn, black beans, green onions, cheese, cilantro, and crushed tortilla chips.
  4. Add cooked chicken to the salad; drizzle dressing gradually while tossing until well combined.
  5. Serve immediately in individual bowls.
