  • ¼ cup packed light brown sugar (for streusel)

  • ¼ cup unsalted butter, cold and cut into small pieces (for streusel)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, ground cinnamon, and salt.
  3. In another bowl, mix egg, milk, melted butter, and vanilla until combined.
  4. Pour wet ingredients into dry ingredients and stir gently until just moistened.
  5. Fold in chopped apples gently.
  6. For the streusel topping, mix flour, brown sugar, and cinnamon in a small bowl. Cut in cold butter until crumbly.
