  • 23 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can corn kernels (15 oz), drained
  • 1 can diced tomatoes with green chilies (10 oz)
  • 1 can condensed cream of mushroom soup (10.5 oz)
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend
  • 1 large bag Nacho Cheese Doritos (9.25 oz), crushed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a skillet over medium heat, brown the ground beef with diced onion and garlic until no longer pink; drain excess fat.
  3. Stir in taco seasoning, black beans, corn, and diced tomatoes; simmer for 2-3 minutes.
  4. In a bowl, mix the cream of mushroom soup with sour cream until smooth.
  5. Layer half of the meat mixture in the baking dish; top with half of the cream mixture and one cup of cheese. Add half of the crushed Doritos.
  6. Repeat layers with remaining ingredients.
  7. Cover with foil and bake for 15 minutes; remove foil and bake uncovered for an additional 10 minutes or until cheese is bubbly.
  8. Let rest for 5-10 minutes before serving.
