  • 1 lb lean ground turkey
  • 1 cup low-carb marinara sauce
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 2 cloves garlic
  • Dried herbs: basil and oregano

Instructions

  2. Slice zucchinis lengthwise into thin strips, sprinkle with salt, and let sit for 10-15 minutes before patting dry.
  3. In a skillet, heat olive oil and brown ground turkey; add minced garlic and herbs.
  4. Combine marinara sauce with turkey mixture and set aside.
  5. In a bowl, mix ricotta, mozzarella, Parmesan, eggs, and remaining herbs.
  6. Layer meat sauce, zucchini strips, and cheese mixture in a baking dish; repeat layers twice more.
  7. Top with remaining meat sauce and mozzarella; cover with foil.
  8. Bake for 30 minutes covered, then remove foil and bake for another 15 minutes until bubbly.
